Trader Joes Quick Blueberry Muffins

Sometimes, you need muffins on the fly. I devised this DIY recipe at the beach, after realizing our pancake griddle was MIA. Here’s what you’ll need:

2 cups Trader Joes Buttermilk Pancake Mix (or other label)
1/2 teaspoon baking soda
1/2 Sugar
