Trader Joe’s Croissants

I was skeptical of Trader Joe’s Mini Croissants at first. How good could a frozen croissant be, I thought.

The answer: Pretty darn good.

The only issue is that you have to leave them out overnight to proof, which, depending on your level of organization, can be a little tricky. When I remember to do it on a school night, I’m rewarded with the happiest children ever in the morning.

We took them to the beach this summer, and they took up very little space due to their 4×6 inch box. But they were a secret weapon, and raved about by visiting grandparents for weeks to come.

Some of the ways we’ve eaten them: with Lemon curd and fresh peaches, rendering them almost donut-like. With smoked turkey and Havarti, making them the perfect school lunch. And of course, the classic egg and applewood smoked bacon combination.

If overcooked, they get a hard shell and flake, so keep a close eye on them in the oven. When they appear golden and flaky, pounce- you won’t be disappointed.
