Trader Joes Quick Blueberry Muffins

Blueberry Muffins with Buttermilk Pancake Mix
Sometimes, you need muffins on the fly. I devised this DIY recipe at the beach, after realizing our pancake griddle was MIA. Here’s what you’ll need:
- 2 cups Trader Joes Buttermilk Pancake Mix (or other label)
- 1/2 teaspoon baking soda
- 1/2 Sugar
- 3/4 cup milk (or more if batter seems thick)
- 1 Stick of Butter
- 1 egg
- Optional: grated orange rind
- 1-1.5 cups of Blueberries, fresh or frozen
Measure the mix into a bowl, then add the baking soda and sugar.
Soften the butter and cut in with a wire pastry cutter or fork. Add the egg and milk, stir until fully mixed, no longer. Then, pour in the blueberries. Don’t overmix, or you’ll have purple batter! If you like, add grated orange zest for a gentle citrus flavor.
Spoon the batter into lightly greased muffin tins, filling just a smidge over the halfway mark. You can use mini or full sized tins. Bake at 350 degrees for 20 minutes, or until the muffins spring back when touched lightly in the center
.(Note: If using mini pans, reduce cooking time by 7 minutes.)
Then, enjoy! We had ours with lemon curd and sliced peaches. The buttermilk added a tangy element that I loved.
